Another week of cooking non-stop while we’re quarantined at home.
I’m really enjoying testing out new recipes but I DO NOT enjoy doing dishes. Anyone else feel the same way? I feel like I’m constantly doing dishes and am kinda over it. Not a ton of new recipes were tried. We cooked some of the same meals (Garlic Mussels, we can’t get enough) & then some family favorites (meatballs & sauce).
And then there was the night we ordered Cheesy Bread from Dominoes at 9:45 pm. I honestly felt like I was back in college. Cheesy Bread after a night of drinking was my jam. I think my roommates & I singlehandedly kept Dominoes in business during those years. So challenge to myself- make a healthier version of cheesy bread….or scratch that, just make cheesy bread at home!

Tequila Lime Chicken (from Ina Garten’s Family Style Cookbook, page 85)
Very tasty, reminded me of summer! The recipe called for the chicken to be grilled, but it was cold that day so I baked it. Would definitely taste best grilled. I will totally be making this during the summer months with a nice, fresh Cowboy Caviar Corn Salad.
Banana Everything Cookies (from NY Times Cooking)
My friend Jess sent me this recipe & it did not disappoint. If you are looking for something to bake other than Banana bread during quarantine, make these cookies! I didn’t even have time to take a photo of them before we ate them all.
Double Chocolate Paleo Banana Bread Bars (from Ambitious Kitchen)
Another great recipe to make if you have super ripe bananas. AND it’s healthy! But don’t tell Alex this! He LOVED these. The only refined sugar in the recipe is from the chocolate chips. Other than that, healthy ingredients that taste SO decadent. This bread is definitely a mix between a brownie or flourless chocolate cake. Once you make this recipe, store the bars in the fridge. Sorry but the photos totally do not do these bars justice!!
