This week I decided to switch up my weekly series to include ALL things I’m making or loving the past week.
I will still be sharing the recipes I make from all the cookbooks I’ve been hoarding. But I’ll also be adding what shows we’re watching, fun products I’ve been trying, interesting articles & links…basically anything & everything that has been getting me through the week.
So this week….the cooking has been almost non-existent! We ate a bunch of leftovers, ordered in for Cinco de Mayo & then just made meals that are in our normal rotation. The only new to us recipe that I made was Whipped Parmesan Cauliflower Puree (from Skinnytaste: Fast and Slow, page 264). Garlicky whipped cauliflower that tasted like mashed potatoes if you closed your eyes. Yum!
That brings me to a few kitchen gadgets that I’ve been using & loving this week. If you didn’t catch my Instagram stories from earlier in the week, I received a shipment of Pampered Chef goodies from Alex’s mom to test out (she’s a consultant for the company). The garlic press & quick cooker have been my favorites so far. I made the steamed cauliflower for the recipe above in the quick cooker– it was done in 1 minute. It’s a total time saver & can’t wait to experiment with other recipes. Stay tuned for more ways to use the quick cooker (you can even use it to bake!).
Defending Jacob on Apple TV is a must see. This mini series has 8 episodes (I think) and so far 5 of the episodes are available. It’s a dark drama about a high school kid who gets murdered & the on going investigation. Also, it’s very rare that Alex & I find a show that we both love, so this has been a treat to watch together.
Other shows we’ve been bingeing: the Sopranos & Criminal Minds (see a theme here).
I’ve been using the new All Bright C Serum from BeautyCounter & I see a difference in my skin. My dark spots are beginning to look a bit brighter & my skin glows after using it. The serum protects against environmental stressors and is full of all the Vitamin C your skin needs!
Essential oils are my shit right now. My new favorite diffuser combo is Peppermint & Valor for when I’m trying to focus on work. Want to get started with oils- sign up here! Want more essential oil inspo- follow me on Pinterest.
My friend Tyler’s Restorative Yoga class has been a highlight of my week. She teaches about 2-3 free classes every week & it has helped relax my body a lot. Her class focuses on deep stretching & meditation (and is not your typical yoga with poses like downward dog etc). Take a class with me! Doing my best to have a green thumb- here’s a great article about easy house plants to care for.
Love getting a daily mantra emailed to me everyday from The I Am Journal. Today’s mantra: Be with your breath. Sign up to receive their emails HERE.
Everything you need to know about the current meat shortage– I’m already seeing purchase limits on chicken in my local grocery stores
Check back every Friday for a little wrap up about what I made this past week plus things that have helped this week be a bit more bearable!
