Anyone else have a pretty decent week? It seems like life in quarantine is starting to seem normal.
Honestly, not looking forward for things to go “back to normal.” As much as I yearn to see my friends & family, this quiet time alone at home has felt like a gift. Being able to focus on things that I’ve been putting off forever has really felt great.
I don’t think things will ever go back to how they used to be, which is fine by me. I’m ready to create a new normal & keep up with a slower paced lifestyle. Only time will tell what our world will look like in the next coming months or years.
Anywho….here’s what I’ve loved about this week!
I got motivated to get back in the kitchen & try out some new recipes.
We tried this awesome Baked Ziti recipe which gave us leftovers for days! I also made my friend Tyler’s Paleo Blueberry Banana Muffins (by subbed the blueberries for chocolate chips). Super tasty but also really healthy! The recipe will be up on her blog shortly, but I can email it to you if you want to try these out!
For a healthy breakfast option, I made the Zucchini Frittata Loaf from The Forest Feast Gatherings cookbook (page 104). I love all the recipes from this cookbook, they’re plant based & all healthy (aka actually really flavorful & yummy). This breakfast option is great to have on hand & can easily be heated up every morning. Here is the recipe:
- 4 zucchini
- 12 eggs
- 2 tbsp fresh thyme
- 6 chopped scallions
- 1 tsp garlic powder
- ¼ tsp salt
- Preheat oven to 375 degrees. Line 9x5 loaf pan with parchment paper (or spray really well with cooking spray).
- Grate zucchini over a colander & press out excess liquid.
- Mix grated zucchini in a large bowl with the remaining ingredients.
- Pour mixture into the loaf pan & bake for 1 hour (or until egg is set).
- Slice & serve warm!
Dead to Me Season 2 is now on Netflix! If you haven’t watched this show, do it. It’s HYSTERICAL! Also, Season 4 of Workin’ Moms in on Netflix. Another absolutely hysterical show about mom friends & their trials and tribulations as mothers.

So I continue to be impressed with this garlic press….but this week I’ve been using my new citrus press! I never knew I needed this in my life. Every morning I drink hot tea with lemon & this press is perfect. No more squeezing the lemon & getting juice everywhere and seeds in my drink!
