We are going super simple for today’s Meatless Monday meal.
Since we are swiftly moving into spring, I wanted to start showcasing meals that reflect that. Dishes with bright colors, especially greens are something I’ve been looking for more recently. I’m not going to lie, I’ve fallen into a bit of a rut lately with my meals. I’ve been relying on frozen meals a lot since being on the Faster Way to Fat Loss program & I need to get back to cooking healthy, fresh meals!
These Spicy Cucumber & Feta cups make great appetizers. All the ingredients are fresh & the red pepper flakes add a slight kick! If you want to make this more of a meal- you can certainly add a protein to round out this recipe. I think a meditteranean flavored shredded chicken would pair nicely with these ingredients. If you want to keep it meatless- roasted chickpeas would be a great addition!
- ½ cucumber, peeled & diced
- 2 celery stalks, diced
- ½ avocado, diced
- 3 tbsp. Crumbled feta
- Head of butter lettuce
- 3 tbsp. Olive oil
- Juice of ½ lemon
- 1 tsp. Red pepper flakes
- Pinch of salt
- Combine diced cucumber, celery, avocado & feta in a small bowl.
- To make the dressing- whisk olive oil, lemon juice, red pepper flakes & salt in a small bowl.
- To assemble wraps- peel off the butter leaves & arrange on a platter. Spoon cucumber mixture into each leaf. Drizzle dressing over each wrap.
