This is one of my go-to lunches (especially on low carb day). You can’t go wrong with easy shredded chicken over a bed of flavored cauliflower rice.
Cauliflower rice is a great substitution for rice in general. You can flavor it a number of ways. On it’s own, it is only 25 calories a cup & a great source of fiber. I also find cauliflower rice to be super filling.
I like to top off my cauliflower rice bowl with a protein.
Shredded chicken is my favorite. I like to pop a few chicken breasts into my slow cooker, add a jar of my favorite salsa (Trader Joe’s Pineapple Salsa) and cook on low for 5 hours. It comes out perfect every time. If you don’t have the time- buy a rotisserie chicken from the grocery store & mix with some salsa for this recipe.
Either fresh or frozen riced cauliflower rice will work for this recipe. Frozen riced cauliflower is my preference- it’s just easier & I like to always have it on hand. If you buy fresh, just make sure to use it within 2-3 days of buying it.
And we can’t forget about the toppings!
This recipe obviously calls for Mexican flavors so I suggest the following toppings: shredded lettuce, sour cream, shredded cheese, avocado & cilantro. If you are trying to keep this dairy free- there are tons of great dairy free cheese available now. I found a fantastic dairy free alternative- Cashew Fiesta Dip from Trader Joe’s (basically mimics a cheese spread) that I love to heat up & pour over my cauliflower rice bowl. Make this recipe your own & try out different flavor profiles and toppings!
- 1 tbsp. Olive oil
- ½ yellow onion, diced
- ½ red pepper, diced
- ½ yellow pepper, diced
- ½ orange pepper, diced
- 1 bag frozen cauliflower rice
- ½ tsp. Onion powder
- ¼ tsp. Red pepper flakes
- ½ tsp. Trader Joe’s Chili Lime Seasoning
- Juice of 1 lime
- Shredded chicken
- Salt & pepper to taste
- In a large frying pan over medium heat, heat the olive oil. Add the onion & peppers to the pan and cook for about 3-5 minutes, until softened.
- Add the cauliflower rice & cook for about 5-7 minutes.
- Add seasoning, lime juice, salt & pepper. Cook for about 2-3 more minutes.
- Serve cauliflower with shredded chicken plus various toppings.
