I’ve been toying with the idea of incorporating more meatless meals in my diet recently. I keep hearing about all the benefits of a plant based diet, but I just don’t think I can entirely take the leap to be a complete vegan/vegetarian. BUT, I’m willing to do a few meatless meals a week.
One of my favorite “easy” vegan meals for weeknight dinners is the Beyond Burger. My soon-to-be mother in law introduced me to these plant based burgers & I can’t get enough. I simply grill the frozen burger (I feel like it’s more flavorful when grilled) & eat it on top of two pieces of Dave’s Killer Bread. I’m a weirdo & HATE ketchup so my choice of condiments are either mustard, sweet relish or BBQ sauce. This burger seriously fills me up, especially when eaten with the bread (each piece has 3-5g of protein & 12-21 whole grains depending on which style you choose). You can find these burgers at Whole Foods & I just recently found them at Stop and Shop! I buy the bread at Costco- it’s the best deal I’ve found so far, $7.99 for two loaves.

- Gnocchi with Butternut Squash Béchamel Sauce

- Falafel
