Happy National Piña Colada Day!
Next to margaritas, Piña Coladas are one of my favorite summer cocktails. Who doesn’t love a cold, frosty drink on a hot summer day. This sweet, rum based cocktail will definitely quench your thirst & is best served frozen in my opinion.
I’m pretty basic & use a store bought piña colada mix (this one is my favorite) to make mine, but it never fails. Depending on what ingredients I have on hand, I’ll add in coconut water or Tropicana’s Coconut Blends juice (basically pineapple juice blended with coconut water). Sometimes I’ll even add fresh or frozen pineapple chunks for an extra boost of flavor. Beware, these will knock you on your ass!

- Ice
- 5-6 oz. coconut rum
- 2 oz. dark rum
- 6 oz. can pineapple juice
- I cup Pina Colada mix
- Fresh pineapple
- Fill your blender at least half way full of ice. If you like your drink on the thicker side, add more ice.
- Pour all other ingredients into the blender & blend well. Garnish with a slice of fresh pineapple.
