Jerk Chicken Cobb Salad

Serves: 4-6
Ingredients
Seasoning
  • 2 tsp allspice*
  • 1 tbsp dried thyme
  • 1 tsp red pepper flakes
  • 2 tbsp garlic powder
  • 2 tsp ground pepper
  • 1½ tsp onion powder
Marinade
  • ¾ cup soy sauce
  • 1 tsp fresh ginger, grated
  • 1 shallot, minced
  • 3 garlic cloves, minced
Remaining Ingredients
  • 1 tbsp olive oil
  • 4 chicken breasts
  • 2 Romaine lettuce hearts
  • 1 red pepper, chopped
  • ½ red onion, minced
  • ½ cup goat cheese, crumbled
  • 3 hard boiled eggs, sliced
  • salt & pepper to taste
Instructions
  1. In a small bowl, combine all ingredients of the seasoning & mix well.
  2. Place chicken in a shallow baking dish. Cover with olive oil & then sprinkle seasoning all over the chicken (coating both sides).
  3. In another bowl, combine all the ingredients for the marinade & mix well. Pour this over the seasoned chicken. Cover the baking dish with Saran Wrap & marinate in the refrigerator for at least 2 hours (or up to 8 hours).
  4. Once fully marinated, grill the chicken over medium high heat for about 6 minutes per side (depending on the thickness of your chicken). Chop chicken into bite sized pieces.
  5. To assemble the deconstructed Cobb salad:
  6. Chop the romaine lettuce & put on a platter. Layer the chopped red onion, red pepper, chicken & hard boiled eggs on top of the lettuce.
  7. Keep refrigerated until ready to serve.
Notes
*To make your own allspice combine 2 tsp cinnamon, 1 tsp nutmeg & 1 tsp ground cloves.
