Garlic Mussels in White Wine Sauce

Serves: 4
Ingredients
  • 1 lb. mussels (frozen or fresh)
  • 2-3 tbsp olive oil
  • ½ stick unsalted butter
  • ½ large white onion, chopped
  • 6 cloves garlic, minced
  • 1-1½ cups dry white wine
  • 1 tsp oregano
  • Salt & pepper to taste
  • 1 box of pasta, I used penne
Instructions
  1. Melt butter & olive oil in a large pot or Dutch oven over medium low heat. Add onion & garlic and cook for about 3-5 minutes or until translucent.
  2. Pour white wine into pot & cook for another 5 minutes.
  3. Add mussels & oregano to the pot and cover pot for about 10 minutes.
  4. Discard any unopened mussels after cooking. Season with salt & pepper.
  5. While mussels are cooking, cook pasta.
  6. Combine cooked pasta & mussels in one large bowl and serve with crusty bread.
