Zucchini Quiche

Serves: 4-6
Ingredients
  • 2 eggs, beaten
  • 4 cups thinly sliced zucchini
  • 1 cup onion, chopped
  • 2 tbsp dried parsley
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp basil
  • ½ tsp oregano
  • ¼ cup butter
  • 8 oz shredded mozzarella cheese
  • 1 9 oz deep dish frozen pie crust (thawed)
Instructions
  1. Preheat oven to 375 degrees.
  2. In a frying pan over medium heat, sauté sliced zucchini & onion in butter for about 10 min. Add in seasonings & stir.
  3. In a medium bowl, combine beaten eggs & shredded cheese. Stir in zucchini mixture.
  4. Pour into crust.
  5. Bake for 20-30 minutes or until pie crust is lightly browned.
