Shredded Chicken & Cauliflower Rice Bowl
 
 
Ingredients
  • 1 tbsp. Olive oil
  • ½ yellow onion, diced
  • ½ red pepper, diced
  • ½ yellow pepper, diced
  • ½ orange pepper, diced
  • 1 bag frozen cauliflower rice
  • ½ tsp. Onion powder
  • ¼ tsp. Red pepper flakes
  • ½ tsp. Trader Joe’s Chili Lime Seasoning
  • Juice of 1 lime
  • Shredded chicken
  • Salt & pepper to taste
Instructions
  1. In a large frying pan over medium heat, heat the olive oil. Add the onion & peppers to the pan and cook for about 3-5 minutes, until softened.
  2. Add the cauliflower rice & cook for about 5-7 minutes.
  3. Add seasoning, lime juice, salt & pepper. Cook for about 2-3 more minutes.
  4. Serve cauliflower with shredded chicken plus various toppings.
Notes
You can top your cauliflower bowl with shredded lettuce, sour cream, shredded cheese, cilantro or salsa.
