Pumpkin & Peanut Butter Energy Balls

Serves: 15 -20
Ingredients
  • 1 cup old fashioned oats
  • ⅔ cup coconut flakes, unsweetened
  • ¼ cup peanut butter
  • ¼ cup pumpkin purée
  • 1 pack Carrington Flax Chia packer or 1 tbsp. Chia seeds and 1 tbsp. Flax seeds
  • ⅓ cup honey or agave nectar
  • ½ cup chocolate chips
  • 1 tsp vanilla extract
Instructions
  1. Mix all the ingredients together in a ball. Cover & chill in the refrigerator for at least 30 minutes.
  2. Once chilled, roll into balls (about 1 inch in diameter).
  3. Store in an air tight container in the refrigerator for up one week,
