Cauliflower & Corn Tacos

Serves: 6-8
Ingredients
  • 1 small head cauliflower, chopped
  • 2 cups frozen corn
  • ½ tsp. Red pepper flakes
  • ½ tsp. Chili powder
  • ½ tsp. Garlic powder
  • 6-8 corn tortillas
  • Olive oil, salt & pepper
  • 3 tbsp. Greek yogurt
  • Juice of ½ lime
  • 1 tsp. Cilantro, chopped
  • Crumbled goat cheese
Instructions
  1. Preheat oven to 425 degrees. Spread cauliflower & frozen corn on a baking sheet. Sprinkle with red pepper flakes, chili powder, garlic powder, salt & pepper.
  2. Drizzle with olive oil & mix with hands.
  3. Roast for 15-20 minutes, until golden brown.
  4. Mix Greek yogurt, lime juice, cilantro & a touch of salt in a small bowl.
  5. Spoon cauliflower & corn mixture into warm tortillas, top with Greek yogurt sauce & crumbled goat cheese.
