Veggie Fajitas
- 1 tbsp. olive oil
- 1 poblano pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- ½ red onion, thinly sliced
- 4 cloves garlic, chopped
- ½ tsp. salt
- ½ tsp. cumin
- ½ tsp. chili powder
- ½ tsp. red pepper flakes
- 2 tbsp. lime juice
- 12 small corn tortillas
- ½ cup sour cream
- ½ cup crumbled goat cheese
- Heat the olive oil in a large cast iron skillet over high heat until smoking. Add all the peppers, onion & cook until charred (5-7 minutes).
- During the final minute of cooking, add in the garlic, salt, cumin, chili powder, red pepper flakes & lime juice.
- Top each tortilla with pepper mixture.
- Garnish with sour cream, goat cheese & a squeeze of lime juice.
