Veggie Fajitas
 
 
Ingredients
  • 1 tbsp. olive oil
  • 1 poblano pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • ½ red onion, thinly sliced
  • 4 cloves garlic, chopped
  • ½ tsp. salt
  • ½ tsp. cumin
  • ½ tsp. chili powder
  • ½ tsp. red pepper flakes
  • 2 tbsp. lime juice
  • 12 small corn tortillas
  • ½ cup sour cream
  • ½ cup crumbled goat cheese
Instructions
  1. Heat the olive oil in a large cast iron skillet over high heat until smoking. Add all the peppers, onion & cook until charred (5-7 minutes).
  2. During the final minute of cooking, add in the garlic, salt, cumin, chili powder, red pepper flakes & lime juice.
  3. Top each tortilla with pepper mixture.
  4. Garnish with sour cream, goat cheese & a squeeze of lime juice.
