Beet Hummus

Ingredients
  • 8 oz. pkg Trader Joe’s Steamed & Peeled Baby Beets
  • 15 oz can chickpeas, drained & rinsed (reserve ¼ cup of liquid)
  • 4 cloves garlic, minced
  • 2 tsp lemon juice
  • 1 tbsp tahini
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ cup olive oil
Instructions
  1. Cut the cooked beers in quarters then add to your blender/food processor. Blend until mostly smooth.
  2. Add the chickpeas, chickpea liquid, garlic, lemon juice, tahini, salt & pepper. Blend until smooth.
  3. Drizzle in the olive oil & continue to blend.
  4. Add more salt, pepper or lemon juice if desired.
  5. Add more olive oil or water if mixture is too thick.
