Pear & Goat Cheese Naan Pizza

Ingredients
  • 1 Bosc pear, peeled & sliced thin
  • ½ tbsp butter
  • 8 oz goat cheese
  • ¼ cup sweet onion, chopped
  • 1 tsp sugar
  • Dash of salt
  • 3 tbsp olive oil
  • 15 sprigs fresh thyme
  • 4 tbsp honey
  • 2 pieces of Naan bread
Instructions
  1. Preheat oven to 400 degrees.
  2. Sauté onions in 1 tbsp of olive oil with sugar & salt over medium heat until browned.
  3. Using the same pan, melt butter over medium low heat. Add pears & roast for 10 minutes, flipping once.
  4. While the pears are roasting, add 3 sprigs of thyme to a small bowl with 2 tbsp of olive oil. Let sit for about 5 minutes.
  5. Mix the goat cheese with 2 tbsp of honey and 5 sprigs of thyme (remove leaves from stems & mince).
  6. Brush the olive oil that has been had the thyme sprigs marinating in it on the 2 pieces of naan bread. Spread the honey whipped goat cheese mixture evenly on both pieces.
  7. Add the onions & pear.
  8. Line a cookie sheet with parchment paper & place naan bread pizzas on it.
  9. Bake for about 8-10 minutes or until top of pizza starts to brown.
  10. Remove from the oven. Top with the remaining thyme & 1 tbsp of drizzled honey.
