Tacos are life! I would seriously eat a taco everyday if I could……but I try not to eat it too much because it could be loaded with lots of yummy, unhealthy things. I found this recipe for crispy black bean tacos on Pinterest & was intrigued! It was both a meatless option (could also be completely vegan if you remove the cheese) and an easy weeknight dinner option. I have to be honest- I’m not a cook dinner every night girl. I’d rather meal prep on Sundays for easy meals throughout the week or just order take out 🙂 Sometimes I am so exhausted from a long day at work that I really can’t be bothered to cook a full meal when I get home (thank god my boyfriend is an amazing cook!). But this recipe was both easy & SOOOOO good! This can be served with my Skinny Guac recipe!
- 2 can black beans
- ½ cup minced red onion
- 1 tsp. cumin
- 1 tsp. paprika
- 1 tsp. chili powder
- 2 tbsp. chopped cilantro
- 6 tbsp. shredded colby jack cheese mix
- 2 tbsp. olive oil (plus more to add to the pan)
- pinch of salt
- 1 pkg. 8 in. corn tortillas
- In a medium bowl, combine black beans with red onion, cilantro & spices. Add a pinch of salt & mash all the ingredients together.
- In a large non-stick skillet (I prefer to use a cast iron skillet), add olive oil and heat over medium-high heat.
- Add one corn tortilla at a time and let each one get hot for a few seconds. Then add about ¼ cup of the filling to one half of the tortilla. Press down and even out the filling with the back of the spoon. Top with a sprinkle of shredded cheese.
- Using a spatula, carefully fold the tortilla over so it forms a shell. Press down lightly on the tortilla so it holds its shape.
- As the first tortilla cooks, move it to the side & start a second one. Depending on the size of your pain, you should be able to fit 2-3 tacos at a time.
- Cook each taco for about 3 min per side until they are lightly browned & crispy.
- When flipping the taco to cook the other side, use a spatula and flip the taco toward the folds the filling doesn't fall out.
- Serve tacos with toppings such as hot sauce, salsa, sour cream & avocados.
