I’ve never been a huge smoothie person, but I’ve been dabbling since being quarantined at home & this coffee smoothie is my jam!
When I was working, I never had time to make a smoothie in the morning which totally bummed me out. I have a hard time getting in enough fruits & extra nutrients so a goal of mine during quarantine was to experiment with smoothies.
I stumbled across the idea of a Coffee Smoothie while trolling Pinterest for smoothie inspiration & couldn’t resist. Healthy foods only appeal to me unless they taste decadent & flavorful (and basically taste unhealthy). I added some natural sweetness to this smoothie to make it feel like a dessert but also still make it nutritious. This is a great breakfast smoothie or mid morning snack!
One ingredient that is such a great natural sweetener is a date.
I have been completely turned off by dates because I always thought they tasted like raisins! Of course I was wrong & now am so obsessed with dates. Pro tip: slice a date, stuff it with almond butter & chocolate chips- you’re welcome! Anyways, add a date to this smoothie to give it some more sweetness without added sugar!
Also, it’s best to freeze your bananas for this smoothie. I always forget & make my smoothies with fresh bananas but have to add more ice to make it cold. If you freeze the banana ahead of time, you’ll need less ice. It’s really just up to you & your preference.
You can also use any nut milk you want in this recipe. I chose coconut milk because it’s so creamy & I like my smoothies on the thicker side. Almond milk would be great as well as oat milk. You would just most likely need to add a bit more ice to get a thicker consistency.
The collagen powder & hemp seeds are totally optional. I highly suggest you start adding collagen powder to your diet however. As we age, our bodies produces less & less collagen therefore that’s when you get the saggy skin, wrinkles etc. Collagen powder is great for hair, skin, nails & joint health. I put two scoops in my coffee every morning. It’s tasteless & dissolves instantly. This collagen powder is my favorite. If you don’t drink coffee, add it to smoothies, baked goods or tea!
- 1 banana
- ⅓ cup of chilled brewed coffee
- 1 scoop of protein powder
- ½ cup unsweetened coconut milk
- 1 scoop of collagen powder
- 1 tsp vanilla
- 2 tbsp almond butter (heaping)
- ½ tbsp unsweetened cocoa powder
- ½ tbsp hemp seeds
- 2 tsp honey
- 1 date
- ice
- Put all ingredients in a blender & mix well.
- Pour into a 16 oz mason jar & enjoy!
